  • 1 teaspoon white sugar
  • 1 tablespoon ground ginger
  • 1 teaspoon chili powder
  • 1 1/4 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground black pepper
  • 4 teaspoons curry paste
  • 8 cloves garlic, pressed
  • 1 (10 ounce) can tomato sauce
  • 2/3 cup plain yogurt
  • 2 bananas, diced
  • 3 tomatoes, chopped
  • 1/4 cup flaked coconut

Heat the sunflower oil in a large saucepan over medium heat, allowing it to warm up thoroughly. Introduce the sliced onions into the saucepan and cook until they have become soft and their color has changed to a translucent state, approximately 5 minutes. Add the curry powder, cumin, turmeric, salt, sugar, ginger, chili powder, cinnamon, and black pepper to the saucepan, stirring constantly until the spices release their aroma, roughly 1 minute.

Next, incorporate the curry paste and minced garlic into the saucepan, stirring well to combine. Cook for another minute, allowing the flavors to meld together. Then, pour in the tomato sauce and yogurt, stirring gently until the mixture reaches a gentle simmer. Introduce the diced banana into the saucepan and continue to cook it gently for 3 minutes, allowing the flavors to blend.

Add the chopped tomatoes to the saucepan and continue to cook for 1 minute more, stirring occasionally. Finally, just before serving, sprinkle the coconut flakes into the saucepan and serve hot
