Sweet and Sour Pork Chops
Ingredients
  • 1 (8 ounce) can tomato paste
  • 1 cup pineapple juice
  • 1/2 cup raisins
  • 2 tablespoons brown sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon apple cider vinegar
  • 1/2 tablespoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1 pinch seasoned salt, or to taste
  • 2 bone-in pork chops
  • 2 tablespoons salted butter
Instructions
1
Combine the concentrated tomato paste with pineapple juice, dried fruit, brown sugar, cornstarch, vinegar, grated ginger, spicy red pepper flakes, and salt in a medium-sized bowl.
2
Set the mixture aside for now.
3
Next, clean the pork chops thoroughly and gently pat them dry with paper towels to remove excess moisture.
4
Melt a generous amount of butter in a preheated cast iron skillet over a medium-high heat setting.
5
Carefully add the pork chops to the skillet and sear them on both sides until they achieve a nice brown color, taking about 5 to 8 minutes in total.
6
Do not remove the pork chops from the skillet after browning, as you will need to add the sauce later.
7
Pour the prepared tomato paste mixture into the skillet, decrease the heat to a lower setting, and allow the sauce to thicken until it reaches a gravy-like consistency.
8
Meanwhile, cook the pork chops for an additional 20 minutes or until they are cooked through and no longer pink in the center.
9
To ensure the pork chops are fully cooked, insert an instant-read thermometer into the thickest part of each chop.
10
The internal temperature should reach 145 degrees F (63 degrees C).
