Ingredients
  • 1 pound seedless red grapes
  • 1 1/2 cups apple cider vinegar
  • 1 cup water
  • 1 cup raw sugar
  • 1/2 small red onion, cut into slivers
  • 2 teaspoons yellow mustard seeds
  • 1 teaspoon whole black peppercorns
  • 1 cinnamon stick
  • 1 bay leaf
  • 1 star anise pod
  • 1 whole allspice

First, separate the grapes from their stems and discard any that are not in perfect condition. Remove any grapes with visible blemishes or soft spots from the mixture.

Next, place the selected grapes in a large, quart-sized mason jar and set it aside for now.

Combine the vinegar, water, sugar, red onion, mustard seeds, peppercorns, cinnamon stick, bay leaf, star anise, and allspice in a saucepan. Heat the mixture over high heat until it reaches a boil.

Once boiling, reduce the heat to a low setting and let the mixture simmer for about 10 minutes, or until the onion has become tender.

After 10 minutes of simmering, remove the saucepan from the heat source and allow it to cool for 15 minutes.

Once cooled, carefully pour the liquid over the grapes in the mason jar. Use a gentle swaying motion to distribute the spices evenly throughout the mixture.

Finally, cover the jar and refrigerate it for at least 24 hours before serving.
