Ingredients
- 1/4 pound salt pork, cubed
- 1 small onion, coarsely chopped
- 1 1/2 cups cold mashed potatoes
- 1 large egg
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 pinch ground nutmeg
- 2 cups sifted all-purpose flour
- 1/2 cup all-purpose flour
- 1 gallon water, or as needed
- 2 (32 fluid ounce) containers beef broth

Heat oil in a pan over medium-high heat and cook salt pork until it's nicely browned, approximately 10 minutes. Remove excess fat from the pan and set aside salt pork along with onion mixture.

Combine mashed potatoes, egg, salt, black pepper, and nutmeg in a bowl; stir 1 cup flour into the potato mixture. Sprinkle 1 cup flour onto a clean surface and turn dough out onto the surface. Knead the dough on the surface until it's well combined.

Divide the dough into 12 equal portions and shape each portion into a ball, dusting your hands with remaining 1/2 cup flour. Use your thumb to create an indentation in each dumpling and fill it with a small amount of salt pork-onion mixture. Fold the dough over to seal the dumpling and roll it in flour.

Place water in a large pot and bring it to a boil. If desired, replace half of the water with beef broth. Gently drop dumplings into the boiling water and broth; reduce heat to low. Simmer until cooked through, approximately 25 minutes. Drain the dumplings and transfer them to a serving dish.
