Swedish Meatballs with Gravy
Ingredients
  • 2 slices day-old white bread, crumbled
  • 1/2 cup heavy cream
  • 1 teaspoon butter
  • 1 small onion, minced
  • 2/3 pound ground beef
  • 1/3 pound finely ground pork
  • 1 egg
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/8 teaspoon ground ginger
  • 1 tablespoon butter
  • 1/4 cup chicken broth
  • 3 tablespoons all-purpose flour, or as needed
  • 2 cups beef broth, or as needed
  • 1/2 (8 ounce) container sour cream

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

In a small bowl, combine bread crumbs and cream. Allow the mixture to sit for 10 minutes, allowing it to absorb the liquid evenly.

Meanwhile, melt 1 teaspoon of butter in a skillet over medium heat. Cook and stir the onion until it reaches a light brown color, approximately 10 minutes. Transfer the cooked onion to a mixing bowl.

In the same mixing bowl, combine ground beef, ground pork, egg, brown sugar, salt, black pepper, nutmeg, allspice, and ginger. Mix these ingredients together until they are well combined.

Add the bread crumbs and cream to the mixing bowl, gently folding them into the meat mixture until it is just combined.

Melt 1 tablespoon of butter in a large skillet over medium heat. Using your hands, shape the meat mixture into small balls, about 1 1/2 tablespoons each. Place these meatballs in the skillet and cook, turning them frequently, until they are browned on all sides, approximately 5 minutes. The inside of the meatballs will still be pink.

Place the browned meatballs in a baking dish, pour in chicken broth, and cover them with foil.

Bake the meatballs in the preheated oven for 40 minutes, or until they are tender. Remove them from the oven and transfer them to a serving dish.

Pour the pan drippings into a saucepan over medium heat. Whisk in flour until it forms a smooth paste.

Gradually whisk in enough beef broth to reach a total of 2 1/2 cups of liquid. Bring the mixture to a simmer, whisking constantly, until it thickens, approximately 5 minutes.

Just before serving, whisk in sour cream. Season the gravy with salt and black pepper to taste. Serve the gravy alongside the meatballs.
