Ingredients
- cooking spray
- 1 cup fresh bread crumbs
- 3/4 cup milk
- 1 pound lean ground beef
- 1/2 pound lean ground pork
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped fresh parsley
- 1/4 cup finely chopped celery
- 1 large egg, lightly beaten
- 1 teaspoon minced garlic
- 1 teaspoon white sugar
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup reduced-fat sour cream
- 3 tablespoons chopped fresh dill
- 1/4 teaspoon lemon zest
- salt and ground black pepper to taste
Instructions
1
To begin, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Next, prepare a baking sheet by lining it with aluminum foil and placing a baking rack on top. Spray the baking rack with cooking spray for easy cleanup.
2
Combine bread crumbs and milk in a large mixing bowl, stirring until the bread crumbs have absorbed the milk. Allow this mixture to sit for about 10 minutes, allowing it to become well-combined.
3
Add ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper to the bowl with the bread crumb mixture. Mix everything together until it is just combined, resulting in a fairly wet mixture.
4
Scoop the meat mixture into 36 portions using a 1-tablespoon cookie scoop. Arrange these meatballs on the prepared baking rack.
5
Place the preheated baking sheet in the oven and bake until an instant-read thermometer inserted into the centers of the meatballs reads 160 degrees Fahrenheit (71 degrees Celsius), approximately taking about 18 minutes.
6
In a large saucepan, melt butter over medium-low heat. Gradually whisk in flour and continue stirring constantly for 2 minutes.
7
Slowly pour in beef broth and Worcestershire sauce, whisking continuously until the mixture is smooth. Continue to cook and stir for an additional 12 minutes, allowing it to slightly thicken.
8
Add the cooked meatballs to the saucepan and simmer for 3 minutes. Stir in sour cream, dill, and lemon zest; season with salt and pepper to taste.
9
Serve the meatballs immediately.
