Ingredients
- 3/4 cup light molasses
- 3/4 cup heavy whipping cream
- 3/4 cup white sugar
- 2 teaspoons unsweetened cocoa powder
- 1/4 cup chopped almonds, or to taste
- 1 teaspoon vanilla extract
Instructions
1
Combine molasses, heavy cream, granulated sugar, and unsweetened cocoa powder in a saucepan. Place the mixture over high heat and bring to a rolling boil. Continue to cook until the syrup reaches 251 degrees F (122degrees C), or when a small drop of the mixture is dropped into cold water, it forms a firm but slightly yielding ball. This process typically takes 30 to 40 minutes.
2
Once the syrup has reached the desired consistency, remove it from the heat source and stir in sliced almonds and a few drops of pure vanilla extract.
3
Transfer the warm candy mixture to small paper cups, filling them about two-thirds full. Allow the candy to cool and set at room temperature before storing it in an airtight container, away from direct sunlight.
