Ingredients
- 2 quarts water
- 1/4 cup wildflower honey
- 1 large lemon
- 2 bunches fresh mint leaves

Fill a large glass container with water, making sure it's roomy enough to hold the ingredients. Combine honey and water in the container, stirring until the sweetener is fully incorporated. Grate a lemon, taking care to avoid any white pith, and then extract its juice. Add both the grated lemon peel and freshly squeezed juice to the water mixture.

Using one bunch of mint at a time, grasp the stems firmly with one hand and use your other hand to twist and press the leaves gently, causing them to release their aromatic oils. Submerge the squeezed bunches into the water mixture, covering the container with a lid. Place it in direct sunlight for 2 hours.

Discard the mint leaves and give the tea a good shake. Pour it over ice cubes in tall glasses, finishing with a sprig of mint as a garnish.
