- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried dill weed
- 1/4 teaspoon lemon pepper
- 2 (8 ounce) fillets catfish
- 1/2 cup butter, melted
- 1 teaspoon lemon juice, or to taste

Boil a mixture of rice, water, Cajun seasoning, and hot pepper sauce in a saucepan until it reaches a rolling boil.

Reduce the heat to a lower setting, cover the pan, and let it simmer for 20-25 minutes or until the rice is cooked through and all the liquid has been absorbed.

While the rice cooks, combine thyme, black pepper, cayenne pepper, salt, garlic powder, onion powder, paprika, dill weed, and lemon pepper in a bowl and mix until the ingredients are thoroughly blended.

Brush catfish fillets with melted butter on both sides and coat them evenly with the seasoning mixture.

Heat any remaining butter in a large skillet over high heat and cook the seasoned catfish until it's easily flaked with a fork, flipping it over halfway through the cooking time - approximately 4-5 minutes per side.

Serve the catfish over a bed of seasoned rice, drizzling any leftover butter from the skillet over the top and finishing it off with a squeeze of lemon juice.
