Ingredients
- 2 tablespoons lemon juice
- 1 1/2 pounds Bosc pears, washed
- 1 egg
- 1/4 cup milk
- 1 cup whole wheat flour
- 3/4 teaspoon baking powder
- 2 tablespoons cane sugar
- 2 tablespoons brown sugar
- 3 tablespoons cold butter, cut into cubes
- 2 tablespoons cornstarch
- 1/4 cup cane sugar
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit (200 degrees Celsius).
2
Prepare a round baking dish by spreading butter evenly over its surface. The ideal size for this dish is 9 inches in diameter and 2 inches deep, holding approximately 6 cups of batter.
3
Fill a large container with water and add a squeeze of fresh lemon juice. Remove the skin from all but one pear, then cut it into smaller pieces. Submerge these slices in the lemon water to prevent browning.
4
Mix egg and milk together in a separate bowl, whisking until the two liquids are fully incorporated. Set this mixture aside for later use.
5
In another bowl, combine flour, baking powder, 2 tablespoons of cane sugar, and brown sugar. Use a fork to break down the cold butter into small pieces within this mixture until it resembles coarse, rocky fragments.
6
Drain excess water from the pears and place them in a separate bowl. Sprinkle these fruits with cornstarch and 1/4 cup of cane sugar; gently toss to coat the pears evenly.
7
In a separate bowl, whisk together the egg mixture and flour mixture until just combined. Add the pears to the prepared baking dish, then drop spoonfuls of batter on top of these fruits.
8
Place this dish in the preheated oven and bake until it reaches a golden brown color on top, taking approximately 25 minutes. Allow the dish to cool for 10-15 minutes before serving warm.
