Ingredients
- 4 (8 ounce) yams
- 1 medium red bell pepper, seeded and diced
- 2 avocados - peeled, pitted, and mashed
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 green onions, sliced
- 1/2 teaspoon ground cumin
- 3 tablespoons lime juice
- salt and ground black pepper to taste
- 1 cup shredded Cheddar cheese
Instructions
1
Preheat your oven to the desired temperature of 350 degrees Fahrenheit, which is equivalent to 175 degrees Celsius. Line a baking sheet with parchment paper and arrange the yams on it.
2
Place the yams in the oven for 40 minutes, or until they are cooked through and tender, flipping them halfway through the cooking time. Remove the yams from the oven.
3
In a separate bowl, combine the chopped red pepper, diced avocado, chopped cilantro, olive oil, green onions, ground cumin, and freshly squeezed lime juice. Mix everything together until well combined.
4
Cut the baked yams in half lengthwise, and gently pry open their centers using a fork. Fill the cavities with the prepared avocado mixture.
5
Season the stuffed yams with a pinch of salt and pepper to taste. Finally, sprinkle shredded Cheddar cheese on top for added flavor.
