Stuffed Salmon Fillets

  • 2 teaspoons olive oil, divided, or as needed
  • 1/4 cup chopped onion, or more to taste
  • 1/2 (8 ounce) package cream cheese
  • 1/4 cup crumbled blue cheese
  • 1 cup chopped fresh spinach
  • 1 tablespoon dry bread crumbs
  • 1 clove garlic, minced, or to taste
  • salt and ground black pepper to taste
  • 1 (8 ounce) salmon fillet
  • 1 teaspoon lemon juice, or to taste

First, warm 1 teaspoon of oil in a skillet over medium heat; stir in the onion and cook until it becomes soft and pale, approximately 5 minutes. Take the skillet off the heat source and transfer the onions to a separate container.

Next, combine 2 tablespoons of cream cheese with 1 tablespoon of blue cheese in a microwave-safe bowl. Heat the mixture on high for 25 seconds.

Now, merge the cheese mixture with the cooked onions, 1/2 cup of spinach, 1/4 cup of bread crumbs, 2 cloves of garlic, salt, and pepper; mix until the ingredients are fully incorporated. Place the stuffing mixture in the freezer to chill, allowing it to freeze for 15 to 20 minutes.

Before baking, preheat the oven to 350 degrees F (175 degrees C). Line a baking dish with parchment paper.

Cut the salmon into 2 portions. Slice each portion in half, leaving a connecting point at one side.

Heat the remaining 1 teaspoon of oil in a skillet over medium heat. Add the salmon and cook until it develops a slight color on both sides, approximately 15 seconds per side. Transfer the salmon to the prepared baking dish.

Take the chilled stuffing out of the freezer and shape it into 2 balls. Place 1 ball onto each salmon portion.

Bake the stuffed fish in the preheated oven until it flakes easily with a fork, 15 to 17 minutes. Garnish the dish with lemon juice.
