Stuffed Rockfish with Crab Imperial
Ingredients
  • 2 slices day-old white bread, cubed
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons butter, softened
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon seafood seasoning, such as Old Bay™
  • 1/2 teaspoon dried mustard
  • 1/8 teaspoon ground black pepper
  • 2 dashes liquid hot pepper sauce, such as Tabasco™
  • 1 pound fresh lump crabmeat
  • 4 (6 ounce) fillets rockfish
Instructions
1
Preheat the oven to its highest temperature setting, which is 400 degrees Fahrenheit or 200 degrees Celsius.
2
Next, lightly spray a rectangular baking dish measuring 8x8 inches with cooking oil to prevent it from sticking.
3
In a separate container, merge bread cubes, mayonnaise, chopped parsley, melted butter, freshly squeezed lemon juice, seafood seasoning, mustard, black pepper, and hot pepper sauce in a harmonious blend.
4
Gently fold the crabmeat into this mixture until it is fully incorporated, taking care not to damage the delicate chunks of crab.
5
Position fish fillets on a clean, flat surface; spoon 1/4 of the crab mixture onto one side of each fillet.
6
Roll up each fillet around the crab filling, starting from the side with the crab mixture.
7
Place these rolled fillets in the prepared baking dish, opening their sides downwards to allow for even cooking.
8
Bake these fillets in the preheated oven until they are lightly browned and bubbly, with a fork easily breaking apart the fish into flakes.
9
Allow the dish to remain in the oven for approximately 15 minutes, or until it reaches this desired state.
