Stuffed Peppers in Sauce
Ingredients
  • 8 large green bell peppers
  • 6 tablespoons butter
  • 1 large yellow onion, diced
  • 1 1/2 pounds ground round
  • salt to taste
  • ground black pepper to taste
  • 1 cup uncooked white rice
  • 1 gallon tomato juice

Clean and prepare the peppers by washing them thoroughly, then making a circular cut around the stem to remove it. Next, carefully remove the seeds and rinse the inside of the pepper. Discard the seeds and stems, setting the peppers aside for use.

Heat butter in a skillet over medium heat and sauté an onion until it becomes translucent, taking about 3 to 4 minutes. Transfer the cooked onions to a large bowl.

Combine ground beef with the sautéed onions by hand, then season with salt and pepper to taste. Gradually add rice to the mixture while mixing by hand, ensuring everything is well combined.

Mix in the ground beef and rice mixture thoroughly. Now, fill each pepper with the meat and rice mixture.

Preheat a large pot by coating its bottom with oil. Place the stuffed peppers into the pot(s), leaving about 2 inches of space at the top. Pour in enough tomato juice to cover the peppers, making sure they are fully submerged.

If there is any leftover meat mixture, shape it into small balls and add them to the tomato juice.
