- 1 yellow bell pepper
- 1 onion
- 2 1/2 pounds ground beef
- 1 (15 ounce) can tomato sauce
- 12 crushed saltine crackers
- 1/4 cup brown sugar
- 2 tablespoons Worcestershire sauce
- 2 tablespoons chicken stock
- 2 tablespoons olive oil
- 1 egg, beaten
- 1 tablespoon Montreal steak seasoning
- 1 clove garlic, minced
- ground black pepper to taste
- 1/4 cup ketchup, or as needed

Preheat your oven to a high temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Next, spray a 9x11-inch baking dish with cooking spray to prevent food from sticking.

Chop the green bell pepper, red bell pepper, and yellow bell pepper into thin strips. Cut each of these vegetables in half to create uniform pieces.

Cut the remaining 1/4 each of green bell pepper and red bell pepper into smaller pieces, leaving some larger strips intact.

Mix together ground beef, the chopped green bell pepper and red bell pepper, diced onion, tomato sauce, crushed crackers, brown sugar, Worcestershire sauce, chicken stock, olive oil, egg, steak seasoning, garlic, and black pepper in a bowl.

Fill half of the prepared baking dish with the ground beef mixture, leaving about 1 inch around the edges.

Arrange the sliced green bell pepper and red bell pepper on top of the beef mixture, leaving a 1-inch border around the edges.

Cover the sliced green bell pepper and red bell pepper with the remaining beef mixture, tucking in the sides to seal the vegetables within the center of the meatloaf.

Pour ketchup over the top of the meatloaf to add flavor and moisture.

Bake the meatloaf in a preheated oven until it reaches an internal temperature of at least 160 degrees Fahrenheit (70 degrees Celsius), about 1 hour.
