Stuffed Manicotti with Meat

  • 1 (8 ounce) package manicotti pasta
  • 1 pound lean ground beef
  • 1 1/2 cups cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 egg whites
  • 1/2 teaspoon dried oregano
  • 1 (32 ounce) jar spaghetti sauce

Begin by filling a large container with salted water and bringing it to a rolling boil. Add your pasta and cook for 8-10 minutes, or until it reaches the perfect texture of being slightly firm in the middle. Remove from heat and let it cool down a bit before setting it aside to reserve.

Meanwhile, in another large cooking vessel, heat some oil over medium heat and sear the beef until it's nicely browned. Remove from heat and let it cool down.

Take your oven and preheat it to a high temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer).

In a large mixing bowl, combine the browned beef with some cottage cheese, 1 cup of shredded mozzarella cheese, a sprinkle of Parmesan cheese, some egg whites, and a pinch of dried oregano. Mix everything together until it's well combined.

Take your baking dish and lightly grease the bottom with some cooking spray. Pour just enough spaghetti sauce into the dish to cover the surface, then add your stuffed noodles on top. Cover them with more spaghetti sauce and finish it off with the remaining 1 cup of mozzarella cheese. Place your dish in the preheated oven and bake for about 50 minutes.
