Stuffed Irish Baked Potato

  • 2 large baking potatoes
  • 1 1/2 cups finely chopped cabbage
  • 1/2 cup finely chopped onion
  • 4 slices bacon, chopped
  • 1/2 cup milk
  • 1/4 cup butter
  • 1/4 teaspoon ground black pepper
  • salt to taste
  • 3/4 cup shredded Cheddar cheese, divided

Preheat your oven to a temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Scrub the potatoes thoroughly, then use a fork to create multiple holes in each one. Place them on a microwave-safe dish and cook the potatoes in the microwave on maximum power for 5 minutes; flip them over and continue cooking until they're tender, approximately another 5 minutes.

Extract the soft potato flesh from the microwave-cooked potatoes and transfer it to a medium-sized bowl. Set aside the remaining potato skins.

In a large skillet, cook and stir the cabbage, onion, and bacon over medium heat until the vegetables are soft and tender, roughly 10 minutes. Introduce milk, butter, pepper, and salt into the skillet and stir until well combined. Add the potato flesh to the skillet along with 1/2 cup of Cheddar cheese and cook, stirring occasionally, until the milk is absorbed and the potato mixture is smooth, around 5 minutes.

Remove the skillet from the heat source. Fill the potato skins with the cooked potato mixture and place them in a baking dish. Sprinkle the remaining 1/4 cup of Cheddar cheese over the stuffed potatoes.

Bake the stuffed potatoes in your preheated oven until the cheese is bubbly and the potatoes are heated through, approximately 25 minutes.
