- 12 Anaheim chile peppers, charred and peeled
- 1 pound Cheddar cheese, cut into strips
- 1 cup milk
- 1 cup all-purpose flour
- 1 egg, beaten
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon canola oil

Instructions

Remove the seeds and membranes from the chile peppers, taking care not to damage their delicate flesh.

Insert a thin strip of Cheddar cheese into each pepper, making sure it's snugly in place.

Combine milk, 1 cup of all-purpose flour, an egg, baking powder, baking soda, salt, and 1 teaspoon of canola oil in a small bowl. Mix everything together until it's smooth and well incorporated.

Place the remaining 1/2 cup of flour on a flat, shallow plate for dusting purposes.

Heat about 1 inch of oil in a heavy frying pan over medium-high heat.

Dredge each pepper in the flour, coating it evenly, then dip it into the batter mixture. Fry the peppers in batches until they're lightly browned on both sides.
