Ingredients
- 2 cups finely chopped broccoli florets
- 1/2 cup shredded pepperjack cheese
- 1/4 cup mayonnaise
- 4 small button mushrooms, sliced
- 1 teaspoon garlic powder
- 4 large chicken breasts
- 1 teaspoon paprika
- salt and ground black pepper to taste
Instructions
1
Preheat your oven to a high temperature of 400 degrees Fahrenheit, or 200 degrees Celsius. Cover a baking sheet with aluminum foil to make cleanup easier.
2
In a microwave-safe container, combine 2 tablespoons of water with broccoli. Microwave on maximum power for 2 minutes to soften the vegetables. Drain the excess moisture.
3
Place the broccoli in a large mixing bowl and add pepper Jack cheese, mayonnaise, sliced mushrooms, and garlic powder. Mix well to combine.
4
Sprinkle both sides of chicken breasts with paprika, salt, and pepper. Using a sharp knife, carefully make a horizontal incision through the center of each breast to create an opening. Be cautious not to cut all the way through the breast. Fill each breast with the broccoli mixture, making sure it's evenly distributed.
5
Place the stuffed chicken breasts on the prepared baking sheet and bake in the preheated oven until they reach an internal temperature of 165 degrees Fahrenheit, or 74 degrees Celsius. This should take around 35 minutes, or until the chicken is no longer pink in the center and the juices run clear.
