  • 1/2 pound Italian sausage
  • 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
  • 1 cup ricotta cheese
  • 1 egg
  • 3 cloves garlic, crushed
  • 1/2 lemon, juiced
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste
  • 1/2 teaspoon dried oregano
  • 2 cups spaghetti sauce
  • 2 cups shredded mozzarella cheese

Bring a large pot of salted water to a rolling boil, then add the shells. Allow them to cook for 8-10 minutes or until they reach a tender yet firm texture; transfer them to an ice bath to stop the cooking process.

In a large, deep skillet, cook the sausage over high heat until it's evenly browned. Remove from heat and crumble into small pieces. In a separate bowl, combine the cooked sausage, fresh spinach leaves, ricotta cheese, beaten egg, minced garlic, lemon juice, and grated Parmesan cheese. Season with salt, pepper, and dried oregano.

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). In a 9x13 inch baking dish, create a layer of pasta shells and fill them with the sausage and cheese mixture. Pour spaghetti sauce over the top, followed by a layer of shredded mozzarella cheese.
