Stuffed Butternut Squash with Ground Beef
Ingredients
  • 1 (2 pound) butternut squash
  • 1 teaspoon olive oil
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 1 apple - peeled, cored, and diced
  • 3 cloves garlic, diced
  • 2 tablespoons salted butter
  • 2 tablespoons brown sugar
  • 1/4 cup crumbled goat cheese

First, preheat your oven to 375 degrees F (190 degrees C).

Next, cut the butternut squash in half lengthwise and remove the seeds. Brush the cut side of the squash with 1 teaspoon of oil, making sure to coat it evenly.

Place the cut-side down squash on a baking sheet and cover it with aluminum foil, securing it tightly.

Bake the squash in the preheated oven until it becomes tender, which should take around 30 minutes.

Remove the squash from the oven and let it cool for 5 to 10 minutes, during which time you can also leave the oven on.

In a large sauté pan or skillet, heat 1 tablespoon of oil over medium-high heat.

Add the ground beef to the hot oil and cook, stirring constantly, until it's browned and crumbly. This should take about 10 minutes.

Once the beef is cooked, add sliced onion, chopped apple, and minced garlic to the pan.

Continue cooking the mixture, stirring frequently, until the fruit and vegetables are slightly softened, taking an additional 5 to 10 minutes.

Flip the squash over and place it cut-side up on the baking pan, making sure to expose the centers.

Fill the centers of the squash with the beef mixture and dot each half with 1 tablespoon of butter.

Sprinkle a pinch of brown sugar over the beef mixture, making sure to cover it evenly.

Bake the squash, uncovered, in the preheated oven until the brown sugar is golden brown and caramelized. This should take around 15 to 25 minutes.

Remove the squash from the oven and sprinkle each half with crumbled goat cheese, adding a touch of tanginess to your dish.
