Stuffed Bell Peppers N'Awlins Style
Ingredients
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 stalk celery, chopped
  • 1 small green bell pepper, chopped
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon Creole seasoning
  • 1 teaspoon file powder
  • salt and ground black pepper to taste
  • 1 1/2 pounds ground beef
  • 3/4 pound cooked ham, finely chopped
  • 1 pound baby shrimp
  • 1 (16 ounce) package unseasoned dry bread stuffing mix
  • 6 large green bell peppers, halved and seeded
  • 1 cup plain bread crumbs
Instructions
1
Preheat the oven to its lowest temperature setting, which is 325 degrees Fahrenheit or 165 degrees Celsius.
2
In a large cooking vessel, warm the oil over a low flame. Sear the onion, celery, and chopped green pepper for 5 minutes, stirring occasionally. Introduce the garlic into the mixture and cook for another 2 minutes.
3
Add a pinch of freshness with parsley, along with the Creole seasoning, file powder, salt, and pepper to enhance the flavor.
4
Boost the heat to its medium-high setting, then introduce the ground beef. Continue cooking until the beef is uniformly browned. Stir in the diced ham and cook for 5 minutes more. Add the shrimp to the mixture and cook for a mere 2 minutes.
5
Immediately remove the dish from the heat source, then stir in the prepared stuffing mix to combine.
6
Take each bell pepper half and fill it with the mixture. Lightly sprinkle a pinch of breadcrumbs on top to add texture.
7
Arrange the stuffed bell pepper halves in an ungreased baking dish, making sure they are not overlapping. Place the dish in the preheated oven and bake for 1 hour.
