Ingredients
- 4 medium green bell peppers, tops and seeds removed
- 1 (28 ounce) can tomato sauce
- 1/4 cup white vinegar
- 1 1/2 pounds lean ground beef
- 1 cup leftover cooked white rice
- 1/2 cup Italian-style bread crumbs
- 6 tablespoons grated Parmesan cheese
- 1/4 cup finely chopped onion
- 1 large egg, lightly beaten
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1
Collect and prepare all necessary ingredients. Heat a large pot of water until it reaches its boiling point.
2
Add sliced peppers to the boiling water and cook for 4-5 minutes, or until they become tender. Remove peppers from the pot with a colander and rinse under cold running water to stop the cooking process.
3
Combine ground beef, cooked rice, bread crumbs, 4 tablespoons of grated Parmesan cheese, chopped onion, beaten egg, garlic powder, salt, and pepper in a large mixing bowl until everything is well incorporated.
4
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Fill each pepper with the meat mixture, making sure it's evenly distributed.
5
Arrange peppers in a baking dish so that their fillings are facing upwards. In a separate bowl, mix together tomato sauce and vinegar until well combined.
6
Pour the tomato sauce mixture over the peppers in the baking dish. Sprinkle any remaining 2 tablespoons of grated Parmesan cheese on top.
7
Place the peppers in the preheated oven and periodically baste them with the sauce to ensure even cooking. Continue baking until the beef filling reaches a safe internal temperature of at least 160 degrees Fahrenheit (70 degrees Celsius), which should take around 1 hour and 20 minutes.
