  • 12 strips bacon
  • 1 pound broccoli florets
  • 3/4 cup diced red bell pepper
  • 1/2 cup water
  • 1 cup sour cream
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 cups grated Cheddar cheese
  • 8 green onions, chopped

Acquire the necessary components for preparation.

Heat your oven to 400 degrees Fahrenheit (200 degrees Celsius).

Slice each potato into thin layers and roast in the oven until they become soft, taking approximately 1 hour to achieve this state, depending on their size.

In the meantime, chop up the bacon. Place it in a pan over medium heat and cook until crispy, which should take around 7 minutes. Remove the bacon from the pan and set it aside, leaving the remaining fat behind.

Return the pan with the reserved bacon fat to the heat source. Cook the broccoli and red pepper for 2 minutes, then add water and allow it to cook until all the liquid has evaporated. Remove the pan from the heat source and set it aside.

Once your potatoes are done cooking, take them out of the oven and allow them to cool enough for you to handle them. Cut each potato in half and use a spoon to scoop out a portion of the insides, leaving about 1/4 inch of space on the skin's edges.

Combine the scooped-out potato with half of the bacon, broccoli-red pepper mixture, sour cream, salt, and pepper in a bowl. Mix everything together thoroughly. Divide the filling into two equal parts and fill each potato skin with it.

Put the stuffed potatoes back in the oven and bake until they are heated through, taking around 10 to 12 minutes. Remove them from the oven and top with the remaining bacon, Cheddar cheese, and green onions.
