  • 1/2 cup orange juice
  • 1/4 cup brown sugar
  • 1 egg
  • 1 1/2 cups finely chopped rhubarb
  • 1/2 cup chopped fresh strawberries
  • 2 1/2 cups all-purpose flour
  • 1/2 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger

Preheat your oven to the desired temperature of 350 degrees Fahrenheit (or 175 degrees Celsius, if you prefer metric).

Next, prepare your muffin tin by either greasing it with a suitable lubricant or lining the cups with paper liners.

Melt butter and combine it with orange juice, brown sugar, and egg in a mixing bowl using an electric mixer. Blend the ingredients until they are well incorporated.

Add rhubarb and strawberries to the mixture, stirring them in thoroughly.
