  • 2 teaspoons cornstarch
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground ginger
  • 8 tablespoons unsalted butter, melted

Preheat your oven to 375 degrees Fahrenheit, or 190 degrees Celsius.

Next, take a 9x12-inch baking dish and apply butter to its surface.

To prepare the strawberries, carefully remove their green tops using a small, sharp knife or strawberry huller. Place the berries cut-side down on a flat surface and divide them into halves. Then, slice each half lengthwise 3 to 5 times before rotating and cutting across in a uniform manner.

In a separate bowl, combine the diced strawberries, lemon juice, sugar, and cornstarch. Mix everything together until they are fully incorporated and the cornstarch is completely dissolved.

In another bowl, combine rolled oats, all-purpose flour, whole wheat flour, brown sugar, salt, and ground ginger. Pour in the melted butter and mix everything together until the dry ingredients are evenly coated.

Transfer 60% of the oatmeal mixture into the prepared baking dish and spread it out evenly. Use the back of a spoon or spatula to press the mixture down slightly.

Add the prepared strawberries on top, using a slotted spoon. Be gentle when placing them, as you don't want to press down on them. Reserve any accumulated juices in the bowl.

Top with the remaining oatmeal mixture and press it down lightly with the back of a spoon or spatula. Drizzle any reserved juices over the top.

Bake the dish in your preheated oven until the top is golden brown, taking about 45 minutes. Use a spatula to press the top down slightly.
