Strawberry Cake Dessert
Ingredients
  • 2 cups sliced fresh strawberries
  • 2 tablespoons white sugar
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk, at room temperature
  • 1 1/2 teaspoons vanilla extract
Instructions
1
Combine the luscious strawberries with 2 tablespoons of granulated sugar and a squeeze of fresh lemon juice in a medium-sized bowl. Mix everything together until they're well combined and allowed to sit for approximately 10 minutes.
2
Next, place a generous amount of butter into a 10-inch cast-iron skillet. Carefully position the skillet in the oven and heat it up to 350 degrees F (175 degrees). As the oven preheats, allow the butter to melt and become silky smooth.
3
While the oven is warming up, whisk together a blend of flour, 1/2 cup of granulated sugar, baking powder, baking soda, and salt in a large bowl until they're perfectly combined.
4
Once the oven is ready, carefully remove the skillet from the heat; use a gentle swishing motion to spread the melted butter evenly throughout the pan. Pour any remaining melted butter into the flour mixture, then set the skillet aside to cool slightly.
5
Add a splash of buttermilk and a hint of vanilla to the flour mixture, stirring just until there are no dry clumps of flour left. Pour the batter back into the skillet, spreading it evenly across the bottom. Spoon a generous helping of strawberries and their sweet juices over the top.
6
Finally, place the skillet back into the oven and bake until the center of the cake is just barely set, taking around 32 to 37 minutes. Remove from the oven and let cool for 5 minutes before serving warm, straight from the skillet.
