- 3 stalks celery, chopped
- 2 (1/2 inch) pieces fresh ginger root, finely chopped
- 1/2 (8 ounce) can water chestnuts, drained and chopped
- 2 sprigs fresh mint, chopped

Heat a generous amount of olive oil in a substantial skillet over an elevated heat setting. Introduce the pork strips, and cook until they reach a near-brown state. Incorporate sliced red, yellow, and green bell peppers, a carrot, and Brussels sprouts into the skillet, mixing them with the oil to create a uniform coating. Add sufficient water to cover the bottom of the pan, and cook with constant stirring until the bell peppers begin to lose their crispness, approximately 5 minutes.

Gradually decrease the heat to a moderate level, and incorporate minced garlic, chopped onion, fresh parsley, and diced celery into the mixture. Simmer for 5 to 7 minutes, allowing the flavors to meld together. Introduce grated ginger into the skillet and continue simmering for a few more minutes, before adding water chestnuts and chopped mint. Simmer for an additional 2 to 3 minutes, allowing the diverse flavors to harmonize and blend seamlessly.
