Stir-Fried Pancit
Ingredients
  • 1 (12 ounce) package dried rice noodles
  • 1 teaspoon vegetable oil
  • 1 onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups diced cooked chicken breast meat
  • 1 small head cabbage, thinly sliced
  • 4 carrot, thinly sliced
  • 1/4 cup soy sauce
  • 2 lemons - cut into wedges, for garnish

Acquire all necessary ingredients.

Soak rice noodles in a large container; immerse them in warm water and allow to rehydrate for 8 to 10 minutes. Drain the noodles and set them aside temporarily.

Simultaneously, heat oil in a large cooking vessel or wok over medium-low heat. Introduce the onion and garlic into the pan; cook and stir until the onion becomes tender, approximately 3 to 5 minutes. Add chicken, cabbage, carrots, and soy sauce to the pan; cook until the cabbage starts to soften.

Combine the cooked noodles with the mixture and stir constantly until heated through.

Transfer the pancit to a serving platter and garnish with lemon wedges.
