Ingredients
- 2 pounds salmon fillets, bones removed
- 2 lemons, divided
- 1/2 cup white wine
- 1 1/2 cups pesto

Prepare a suitable baking dish by lightly coating it with oil to prevent sticking. Position the fish in the prepared pan, ensuring its skin is facing downwards. Next, apply a mixture of lemon juice and white wine to the fish, allowing it to rest for 15 minutes under marination.

Position the oven rack approximately 9 inches away from the heat source and set the broiler to its highest temperature. Apply a layer of pesto, approximately 1/4 inch thick, on top of the fish.

Place the prepared fish under the broiler and cook until a golden crust forms and the flesh can be easily flaked with a fork, typically taking around 8 to 10 minutes.

Remove the fish from the oven and set it aside for a short period. Subsequently, apply a squeeze of lemon juice from 1/2 a lemon over the fish. Finally, place thin slices of the remaining 1/2 lemon on top of the salmon.
