Ingredients
  • 6 dehydrated sun-dried tomatoes
  • 2 cups boiling water
  • 6 small zucchini, sliced
  • 6 small yellow squash, sliced
  • 1 sweet onion, chopped
  • 2 tablespoons butter
  • 1 teaspoon white sugar
  • 1/4 teaspoon freshly ground black pepper
  • salt to taste

Submerge the sun-dried tomatoes in a bowl filled with boiling water, allowing them to soak for 10 minutes. Use a slotted spoon to carefully lift out the tomatoes and coarsely chop them, setting aside the reserved water.

Transfer this sun-dried tomato-infused liquid to a saucepan and bring it to a rolling boil. Next, add the chopped sun-dried tomatoes, sliced zucchini, diced squash, and finely chopped onion to a steamer basket. Place the steamer basket over the boiling water, then lower the heat to a low simmer and cover the saucepan. Allow the vegetables to cook for 15 minutes, or until they are tender.
