Savory Steamed Egg

  • 2 eggs
  • 1 cup cooled chicken or fish stock
  • 1 dash sake
  • 1/2 teaspoon soy sauce
  • 1/2 cup chopped cooked chicken breast meat
  • 1 shiitake mushroom, sliced into strips
  • 2 sprigs fresh parsley, for garnish

In a medium-sized bowl, mix eggs softly while gradually adding the chicken stock, sake, and soy sauce. Split the mushroom and chicken into two equal portions and place them in two small tea cups. Pour the egg mixture into each cup until they are completely filled.

Place about 1 inch of water in a steamer or saucepan and bring it to a rolling boil. Lower the heat to a gentle simmer, then carefully put the cups into the steamer. Cover it with a lid and steam for 12 minutes, or until the egg is solid but still tender and has a silky texture similar to tofu. Decorate each cup with a sprig of parsley before serving.
