Steamed Clams Portuguese Style
Ingredients
  • 5 pounds clams in shell, scrubbed
  • 1 1/2 pounds chorizo, sliced into chunks
  • 1 large onion, cut into thin wedges
  • 1 (14.5 ounce) can diced tomatoes
  • 2 cups white wine
  • 1/4 cup olive oil
Instructions
1
Rinse clams thoroughly under running cold water, making sure to remove any impurities. Discard any clams that have already begun to open during the rinsing process.
2
Place the cleaned and rinsed clams in a large, heavy-bottomed pot with a secure-fitting lid. Add sliced sausage, chopped onion, diced tomatoes, and white wine to the pot. Cover the pot with a lid and bring the mixture to a high heat. Continue to steam the clams until they all open, requiring occasional stirring to ensure even heating throughout the process.
3
Once the clams have opened, drizzle a small amount of high-quality olive oil over them. Divide the cooked clams and their accompanying ingredients evenly among warm, soup-sized plates. Serve the broth in separate side cups for guests to dip their clams into as desired.
