Steamed Banana Cake
Ingredients
  • 1 (3.5 ounce) package flaked coconut
  • 1/4 teaspoon salt
  • 3/4 cup tapioca flour
  • 1/2 cup rice flour
  • 1/2 tablespoon arrowroot starch
  • 1 cup unsweetened coconut cream
  • 1/2 cup white sugar
  • 1 pound ripe bananas, mashed
  • 1/2 cup coconut milk
  • 1/8 teaspoon salt

Combine the flaked coconut and a pinch of salt in a bowl, then set it aside for now.

Mix the tapioca flour, rice flour, and arrowroot starch in a large bowl until well combined. Gradually add the coconut cream to the mixture, stirring continuously for at least 10 minutes until the flours are fully incorporated into a smooth cream. Next, add sugar to the mixture and stir until it's completely dissolved. Then, incorporate mashed bananas into the mixture, ensuring everything is well mixed. Finally, add coconut milk and the remaining 1/8 teaspoon of salt to the mixture, stirring until everything is well combined. Pour the batter into a square baking pan or individual aluminum foil cups, making sure to cover them evenly. Top the batter with the reserved flaked coconut.

Place a large steamer basket into a saucepan, filling it with 1 1/2 inches of water that's just below the bottom of the basket. Bring the water to a boil, then carefully add the baking pan or foil cups to the steamer basket. Cover the basket and steam until the cake is cooked through, taking around 20 to 25 minutes.
