- 1/2 onion, sliced
- 1/2 green bell pepper, sliced
- salt to taste
- 4 flour tortillas
- 1/2 pound cooked steak, cut into 1/4-inch thick pieces
- 1 cup shredded Mexican cheese blend

Heat 2 teaspoons of oil in a 10-inch skillet over medium heat, allowing the oil to warm up and become hot. Cook and stir the onion and green bell pepper in the hot oil until they are softened, taking 5 to 10 minutes. Add a pinch of salt to the mixture and transfer it to a bowl.

Next, brush 1 side of each tortilla with any remaining oil. Place 1 tortilla, oil-side down, in the same skillet and sprinkle with half of the steak, half of the onion mixture, and half of the Mexican cheese mixture. Place a second tortilla, oil-side up, onto the cheese layer and press down with a spatula to seal it tightly.

Cook the quesadilla over medium heat until the cheese melts and the tortillas are browned, taking 3 to 4 minutes per side. Remove the quesadilla from the skillet and cut it into wedges. Repeat this process with the remaining ingredients to make a second quesadilla.
