Stained Glass Cookies
Ingredients
  • 1/2 cup butter
  • 2 cups semisweet chocolate chips
  • 1 (10.5 ounce) package rainbow colored miniature marshmallows
  • 1 (8 ounce) package flaked coconut
  • parchment paper
Instructions
1
Acquire all necessary ingredients and materials.
2
Melt butter in a 2 ½ quart glass or metal bowl by placing it over gently boiling water in a 3-quart saucepan. This will cause the butter to melt, creating a smooth and creamy consistency.
3
Combine chocolate chips with melted butter; stir until the chocolate is fully incorporated and then remove from heat. Allow the mixture to cool for 10 minutes at room temperature, stirring occasionally to prevent lumps from forming.
4
Add marshmallows to the cooled chocolate mixture; gently stir to coat the marshmallows evenly with the chocolate.
5
Prepare a work surface by laying out two 15x18-inch pieces of parchment paper side by side. Place half of the chocolate-marshmallow mixture onto the center of each piece, shaping it into a 12-inch long log using a rubber spatula.
6
Wrap the logs tightly in parchment paper, ensuring they are secure and compact. Place them in the refrigerator to chill for 30 minutes.
7
Prepare two new 15x18-inch pieces of parchment paper and sprinkle each with 1 cup of flaked coconut. Carefully transfer the chilled logs to the new pieces of parchment paper, taking care not to break or damage them.
8
Roll the coated logs in coconut, applying gentle pressure to ensure they are fully covered on the outside and sides. Wrap them tightly in parchment paper once again, allowing them to chill until firm.
9
Chill the coated logs for at least 4 hours or overnight, depending on your schedule and preferences.
10
Once well chilled, use a sharp knife to cut the logs into 1/2-inch thick slices.
