Ingredients
- 1 1/2 cups warm water
- 1 1/2 cups warm milk
- 1 tablespoon white sugar
- 1 (.25 ounce) envelope active dry yeast
- 2 1/2 cups oat flour
- 2 cups whole wheat flour
- 1 teaspoon salt
Instructions
1
Combine warm water and milk in a large mixing vessel, stirring until the two liquids are well incorporated. Add sugar and yeast to the mixture, allowing it to sit for 5 minutes, or until a foamy texture develops.
2
Next, incorporate oat flour, whole wheat flour, and salt into the mixture, blending everything together thoroughly. Cover the bowl with a lid and place it in a warm environment for 1 hour, allowing the dough to rise.
3
Preheat a large griddle or two skillets over medium heat, making sure they are well greased. Using a spoon, pour the batter onto the pan in thin pancake-sized portions, approximately 8 inches across for each one. Cook for 2 to 3 minutes on the first side, or until bubbles form on the surface. Flip over and cook for an additional 2 minutes on the other side, or until golden brown.
4
Transfer the cooked oatcakes to a warm plate and serve immediately. Alternatively, they can be frozen for later use and reheated as needed.
