Squash Cornbread Dressing
Ingredients
  • 2 cups diced yellow squash
  • 2 cups crumbled cornbread
  • 1/2 cup margarine, melted
  • 2 teaspoons dried sage
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 egg, beaten
  • 1 large onion, chopped
  • 1 1/2 teaspoons sugar
  • salt and pepper to taste
  • 1/4 cup milk
Instructions
1
Begin by placing the squash in a pot that is equipped with a steamer basket, suspended above a pot of boiling water. Steam the squash for 10 minutes, or until it reaches your desired level of tenderness.
2
Next, preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Take a medium-sized baking dish and lightly coat it with a thin layer of grease.
3
In a separate bowl, combine the cooked squash, cornbread, melted butter, dried sage leaves, cream of mushroom soup, beaten egg, finely chopped onion, granulated sugar, salt, and pepper. Finally, add milk to the mixture.
4
Transfer the squash mixture to the prepared baking dish and bake in the preheated oven for 30 minutes, or until the top is lightly browned.
