Ingredients
- 1 pound summer squash, sliced
- 1/4 cup butter
- 1/4 cup chopped green bell pepper
- 1 tablespoon white sugar
- 1/2 cup chopped onion
- 1 egg
- 1/2 cup mayonnaise
- salt and pepper to taste
- 1/2 cup shredded Cheddar cheese
- 1/2 cup pecans, chopped
- 1/2 cup bread crumbs
Instructions
1
Preheat your oven to a high temperature, equivalent to 350 degrees Fahrenheit or 175 degrees Celsius.
2
Fill a large container with water and bring it to a rolling boil. Submerge the squash, allowing it to cook until it reaches your desired level of tenderness. Remove excess water.
3
Combine the cooked squash in a spacious bowl and add butter, reserving half of it for later use. Use a mashing motion to blend the ingredients together.
4
Mix all the remaining ingredients - bell pepper, sugar, onion, egg, mayonnaise, salt and pepper, cheese, and nuts - into the squash mixture.
5
Pour the combined mixture into a 1-quart casserole dish. Sprinkle bread crumbs on top to add texture.
6
Dot the reserved butter onto the bread crumbs for added flavor.
