Preheat your oven to 350 degrees F (175 degrees C). Next, spray non-stick cooking spray liberally onto the surfaces of three round cake pans with diameters of 8 inches. Cover the bases of each pan with a sheet of parchment paper, cut to fit snugly.

Combine granulated sugar and softened butter in the mixing bowl of a stand mixer fitted with a paddle attachment, operating at a moderate pace until the mixture becomes light and airy, approximately 4 minutes. Introduce eggs one at a time, blending on low speed until the ingredients are fully incorporated.

In a separate container, whisk together all-purpose flour, baking powder, and salt until well combined. Gradually add the dry ingredients to the butter mixture in three stages, alternating with milk and commencing and concluding with the flour mixture. Blend on low speed until the ingredients are fully merged after each addition. Incorporate vanilla extract and sprinkles into the mixture on low speed, approximately 20 seconds.

Position one cake layer on a serving plate; spread approximately 3/4 cup of frosting onto the surface. Repeat this process one more time, placing a second cake layer on top and spreading frosting in between.
