Springerle Cookies
Ingredients
  • 4 eggs
  • 2 cups white sugar
  • 1 teaspoon anise extract
  • 4 cups cake flour
  • 1 tablespoon baking powder
Instructions
1
Combine eggs and sugar in a large bowl, whisking until the mixture becomes smooth and pale, approximately 10 minutes. Introduce anise extract into the mixture and blend well.
2
Combine flour and baking powder in a separate bowl, then gently fold into the egg mixture. Cover the bowl with plastic wrap and allow the dough to relax for 15 minutes.
3
Divide the dough into three equal portions. On a lightly dusted surface, roll out each portion to a thickness of 1/4 inch. Utilize a springerle mold or rolling pin, pressing the design into each piece of dough. Separate the cookies and place them 1 inch apart on a greased cookie sheet. Cover with a towel and allow the dough to mature overnight.
4
Preheat your oven to 300 degrees F (150 degrees C). Remove excess flour from the cookies before baking.
5
Bake the cookies in the preheated oven for 15 to 18 minutes, or until the bottoms are lightly browned. Remove from the oven and allow to cool before storing in an airtight container for up to 2 months.
