Spooky Pumpkin Pasta

  • 2 cups Halloween-shaped pasta
  • 2 cups wagon wheel-shaped pasta
  • 2 1/2 cups peeled chopped pumpkin
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon minced garlic
  • 1 teaspoon chopped onion
  • 1 teaspoon chili powder
  • 3 tablespoons olive oil
  • 1 (4 ounce) can sliced black olives
  • 1 (8 ounce) can garbanzo beans, drained
  • 1/4 cup chopped garlic
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 3 tablespoons dried oregano

Boil a large container of salted water in a heavy-bottomed pot until it reaches a rolling boil. Cook Halloween-shaped and wagon wheel-shaped pasta in the boiling water, stirring occasionally until it reaches the desired level of doneness but still retains some firmness to the bite, approximately 12 minutes. Drain and transfer the pasta to a large serving dish.

Combine pumpkin with salted water in a large pot and bring to a boil. Decrease the heat to a lower medium setting and let simmer until the pumpkin is tender, around 20 minutes. Drain the cooked pumpkin and return it to the pot. Add a pinch of nutmeg, allspice, cinnamon, 1 teaspoon garlic powder, onion, chili powder, and 3 tablespoons of olive oil; stir to coat the pumpkin evenly.

Toss olives and garbanzo beans into cooked pasta. Add 1/4 cup of minced garlic, Parmesan cheese, 1/4 cup of olive oil, and dried oregano. Mix well to coat the pasta; top with the pumpkin mixture.
