Split Pea Soup with Ham Stock
Ingredients

  • 1 meaty ham bone
  • 1/2 pound baby carrots
  • 1/2 pound celery stalks, cut in thirds
  • 1 large overripe tomato, punctured with a knife
  • 1 large onion, peeled and quartered
  • 3 cloves garlic, diced
  • 2 bay leaves
  • 1 tablespoon butter
  • 1/2 pound baby carrots, thinly sliced
  • 1 red onion, chopped
  • 3 cloves garlic, diced
  • 1 cup dry white wine
  • 1 pound split peas, picked over
  • 2 russet potatoes, peeled and cut into 1-inch cubes
  • 2 (1.41 ounce) packages sazon seasoning (such as Goya®)
  • 2 teaspoons ground pepper, or more to taste
  • sea salt to taste

Prepare Stock

Combine water, a ham bone, baby carrots, celery, tomato, quartered onion, garlic, and bay leaves in a large stockpot. Bring the mixture to a boil. Then, reduce heat to medium and let it simmer for 3 hours.

Extract Ham Meat

Take out 1 1/2 to 2 cups of ham meat from the bone and dice it. Set the diced ham aside for later use in soup.

Strain Stock

Pour the stock through a strainer and discard any solids. Transfer the strained stock to a covered container and refrigerate it until the fat rises to the top and solidifies, which may take anywhere from 1 to 3 hours.

Skim Off Fat

Once the fat has solidified, use a spoon or skimmer to remove it from the top of the stock. Then, pour the stock into a slow cooker.

Create Soup

Melt butter in a large saucepan. Cook and stir baby carrots, red onion, and garlic in hot butter until they are browned, taking about 7 to 8 minutes. Add a splash of wine into the pan and bring it to a boil while scraping off any browned bits from the bottom of the saucepan using a wooden spoon. Transfer the mixture to the slow cooker.

Rinse and drain split peas, then add them to the slow cooker. Add the reserved ham meat, potatoes, sazon seasoning, black pepper, and sea salt; stir everything together well.

Cook Soup

Cook the soup on High until it has thickened, which may take around 5 to 6 hours.

Blend Soup

Transfer about 1/3 of the soup to a blender. Cover it with a lid and hold it down with a potholder; pulse the blender a few times before leaving it on to blend. Return the blended soup to the slow cooker and stir everything together well.
