- 1/4 cup chopped fresh spinach, or more to taste
- 6 cherry tomatoes, sliced
- 2 tablespoons crumbled feta cheese

Preheat a skillet over medium heat and lightly mist it with cooking spray.

In a bowl, combine egg whites, salt, and black pepper and whisk until well combined; pour the mixture into the skillet and gently rotate it to evenly coat the bottom of the pan. Cook for 1 to 2 minutes.

Place a layer of spinach, tomatoes, and feta cheese in the center of the eggs; continue cooking until the edges of the omelette start to curl up, adding an additional 2 to 3 minutes.

Use a spatula to loosen the omelette from the skillet and fold it in half; continue cooking until the cheese is melted, taking another 2 to 3 minutes.
