Spinach Lentil Dahl

  • 1 1/2 cups red lentils
  • 3 1/2 cups water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon chili powder
  • 1 pound spinach, rinsed and chopped
  • 2 tablespoons butter
  • 1 onion, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon mustard seed
  • 1 teaspoon garam masala
  • 1/2 cup coconut milk

Wash the lentils thoroughly and submerge them in water for 20 minutes to rehydrate.

In a large, deep pot, pour in boiling water and add salt, lentils, turmeric, and chili powder. Cover the pot and return it to a rolling boil, then gradually decrease the heat to a low simmer for 15 minutes. Stir in the spinach and continue cooking for an additional 5 minutes, or until the lentils have become tender. If the mixture becomes too thick, add a little more water to achieve the desired consistency.

In a small saucepan over medium heat, melt the butter and sauté the onions with cumin seeds and mustard seeds, stirring constantly to prevent burning. Continue cooking until the onions are translucent and fragrant, then combine them with the cooked lentils. Stir in the garam masala spice blend and coconut milk, allowing it to heat through before serving.
