- 1 tablespoon olive oil
- 1 (10 ounce) bag fresh spinach
- 1 cup feta cheese
- 1/2 cup pine nuts
- 1 egg
- 1 tablespoon water
- 2 fresh pasta sheets

Prepare the filling:

Heat the olive oil in a large skillet over medium-high heat.

Cook the spinach until it reaches its maximum softness, about 2 minutes.

Allow the spinach to cool down, then use a cloth or paper towels to extract as much moisture from it as possible.

Simultaneously, blend the cooled spinach, crumbled feta cheese, and toasted pine nuts in a blender or food processor until the mixture forms a smooth paste.

Create the ravioli:

Combine egg and water in a small bowl.

Brush a thin layer of the egg mixture over a pasta sheet to help it stick together.

Drop small dollops of the filling onto the pasta sheet, spacing them about 1 inch apart.

Cover each dollop with a separate piece of pasta, pressing out any air pockets that may form around the filling.

Press firmly to seal each portion of the ravioli in a shape of your choice (e.g., circles or squares).

Use the tines of a fork to press around the edges of each pasta ravioli, creating a seal.

Repeat this process with the remaining pasta sheet.

Fill a large pot with lightly salted water and bring it to a rolling boil over high heat.

Once the water is boiling, gently add the ravioli to it and return the pot to a boil.

Cook the ravioli uncovered until they float to the surface and the filling is hot, taking about 3 to 5 minutes.
