- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1 (16 ounce) package whole wheat phyllo dough
- 1/2 cup unsalted butter, melted

Preheat your oven to a medium-high temperature of 375 degrees Fahrenheit (or 190 degrees Celsius, if you prefer).

Next, lightly coat a baking sheet with non-stick cooking spray to prevent the pastry from sticking.

Meanwhile, combine the fresh spinach leaves, crumbled feta cheese, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, and a pinch of salt in a bowl. Mix well to create the filling.

Now, lay out one sheet of phyllo dough on a clean and flat surface. Brush the dough with melted butter, making sure to cover it evenly. Cover the remaining phyllo dough with a damp cloth or towel to keep it fresh.

Place another sheet of phyllo on top and brush with butter again, followed by a third sheet. This will create three layers of phyllo dough.

Cut the buttered phyllo into four long, thin strips.

Place a small amount of the spinach mixture onto the bottom of each strip. Take the bottom right corner and fold the dough over the filling to form a triangle, then proceed with folding the left corner up to create another triangle. Continue this process until all the dough is folded and used.

Arrange the stuffed triangles, seam-side down, on the prepared baking sheet. Lightly brush each triangle with butter to add extra flavor.

Repeat this process with the remaining phyllo dough and spinach filling.

Finally, bake the triangles in a preheated oven for about 20 minutes, or until they are golden brown. Remove from the oven and let cool slightly before serving.
