Spinach Fatayer Triangles

  • 1 1/2 teaspoons active dry yeast
  • 1 1/4 cups warm water (110 degrees F to 115 degrees F)
  • 1 1/2 teaspoons salt
  • 2 tablespoons olive oil
  • 3 cups whole wheat flour
  • 3 pounds fresh spinach, rinsed and stems removed
  • 2 medium onions, finely chopped
  • 2/3 cup lemon juice
  • 4 cloves garlic, finely chopped
  • 2 tablespoons chopped fresh basil leaves
  • 2 tablespoons chopped fresh mint leaves
  • 3/4 teaspoon garlic salt

To begin, combine yeast, sugar, and warm water in a small bowl. Allow the mixture to sit for a while until it starts to bubble and foam on its surface. Next, add salt and olive oil into the bowl and mix well.

In a large mixing container, combine flour and then gradually add in the yeast mixture, stirring until everything comes together to form a smooth dough. On a lightly floured surface, use your hands to knead the dough until it feels silky and smooth, taking about 15 minutes. Cover the dough with a clean cloth and let it rest for some time.

Meanwhile, chop the spinach into coarse pieces. Fill a large pot with salted water and bring it to a boil, then add the spinach. Cook for 2 minutes or until the spinach is slightly wilted; drain it thoroughly and return it to the pot. Add sliced onions, lemon juice, minced garlic, chopped basil, mint leaves, and garlic salt to the pot. Stir everything together for another 2 minutes to allow the flavors to meld.

Preheat your oven to 450 degrees F (230 degrees C) while you prepare the dough. Divide the dough into small pieces, roughly the size of a golf ball, and roll each piece into a disk about 1/4 inch thick. Place 1 tablespoon of the spinach mixture in the center of each disk, making sure to stir it occasionally so the juice doesn't separate. Fold up three sides of each disk to form a triangle, leaving a small hole in the center to allow steam to escape during baking.

Bake the pizzas for 10-15 minutes, or until they're golden brown. Remove them from the oven and let them cool on racks.
