Ingredients
- 2 tablespoons vegetable oil, divided
- 2 cups chopped fresh spinach
- 1 teaspoon ground cumin
- 3/4 cup chopped onion
- 2 green chile peppers, chopped
- 2 teaspoons chopped garlic
- 2 tomatoes, chopped
- 1/2 cup water
- 2 teaspoons ground coriander
- 1 teaspoon ground red chiles
- 2 tablespoons salt
- 8 ounces paneer, cubed
Instructions
1
Heat a small amount of vegetable oil in a cooking vessel over an intermediate temperature; cook and stir the spinach in hot oil until it becomes tender, 3 to 4 minutes. Transfer the cooked spinach to a device for blending or processing; blend until the spinach reaches a coarse consistency.
2
Heat another small amount of oil in a cooking pot over an intermediate temperature; cook the cumin in hot oil until it emits a fragrant aroma, approximately 30 seconds. Add an onion, green chile peppers, and garlic to the pot; cook and stir until the onion is tender, 3 to 4 minutes. Stir in tomatoes and cover the pot; let it simmer for 1 minute before adding the blended spinach paste, water, ground coriander, red chile powder, and salt. Continue to cook until the mixture is heated through, 2 to 3 minutes.
3
Add paneer to the spinach mixture and let it simmer until hot, an additional 1 to 2 minutes.
