- 2/3 cup chopped red bell pepper
- 2/3 cup chopped fresh mushrooms
- 1/2 cup chopped onion
- 2 cups small curd cottage cheese
- 2 (10 ounce) packages frozen chopped spinach
- 2 eggs, lightly beaten
- 6 tablespoons grated Parmesan cheese, divided
- 1 teaspoon black pepper
- 2 (15 ounce) cans tomato sauce
- 2 teaspoons dried marjoram
- 1 teaspoon white sugar
- 1/2 teaspoon garlic powder
- 2/3 cup shredded mozzarella cheese

Heat your oven to the desired temperature of 350 degrees Fahrenheit (175 degrees Celsius).

Fill a large pot with water and bring it to a rolling boil. Introduce lasagna pasta into the boiling water and cook for 8 to 10 minutes, or until it reaches the perfect level of firmness; remove and gently pat dry.

In a large skillet, melt butter over medium heat. Sauté sliced red bell pepper, mushrooms, and onion until they become tender and soft. Combine the cooked vegetable mixture with cottage cheese, fresh spinach, eggs, 4 tablespoons of Parmesan cheese, and a pinch of pepper; thoroughly mix.

In the same skillet used for cooking vegetables, warm up tomato sauce, marjoram, sugar, and garlic powder over low heat for 5 minutes.

Place a generous amount of the vegetable mixture onto each lasagna noodle, roll it up, and position it in a well-greased 9x13 baking dish. Pour the tomato sauce mixture over the rolled lasagna noodles. Sprinkle with mozzarella cheese and remaining Parmesan cheese. Cover and bake in a preheated oven for 40 minutes.
